On its 14-hectare estate, the vineyard has been cultivated organically since 1998, with special attention to local grape varieties, including some Folle Blanche vines, a rare gem of the region. Through its various expressions of cognacs, aged with care, the house perpetuates ancestral know-how. To maintain the excellence of its range for over 20 years, it explores the hidden treasures of local producers, meticulously selecting each cask for its exceptional potential. The cognac of Paul L.57 is a tribute to Paul Gaillard, a producer from Grande Champagne. This limited edition, part of the "Family Treasures" range of the Jean-Luc Pasquet brand, presents a remarkable vintage cognac from 1957. Bottled at its natural degree of 42.3%, this Paul L.57 cognac is made from the Ugni Blanc grape variety. Limited to only 319 bottles, this special edition demonstrates extreme refinement and offers the characteristic finesse of aged spirits. With a dark amber hue tinged with red, this cognac offers a rich and full nose, revealing delicious aromas of brown sugar, almonds, chocolate, and dates. On the palate, it presents an expressive delicacy, with initial sweet notes reminiscent of desserts, followed by more mature nuances of tobacco and pepper, finishing with an incredibly fresh and persistent finale.
