The Cognac distillery was established by Richard Hennessy, an Irish officer who served in the army of Louis XV. Hennessy Cognac was gaining popularity in the United States, a country that had only gained its independence 18 years prior.

The Prince of Wales, who would later become George IV of Great Britain, was a connoisseur of Cognac. He requested Hennessy to create a brandy called "very superior old pale." Since then, the abbreviation VSOP - Very Superior Old Pale - has become a reference used throughout the industry. Additionally, the creation of the XO (eXtra Old) designation was initiated by Maurice Hennessy. Initially reserved for his family and friends, the XO label has become an international reference for Cognacs.

The legendary "pointed ax" is a reference to its founder, Richard Hennessy, who became a French citizen after 12 years of service in the French army.
