XO Pierre Vaudon

Presentation of the domain :

Pierre Vaudon, master cellar of François Voyer since 15 years,  creates his own bottle from his vineyard. His domain is located in Echallat, and it’s composed by 60 hectares from Grande Champagne and Fins Bois.

Presentation of the vintage :

Visuel : a beautiful gold color.

On the noise : the presence of alcohol is weak. The firsts aromas are fresh and brisk like cirus and flowers. Then, there are more spicies aromas like almond, franchipane, and some touches of honey.

On the plate : the blend of  Fins bois eaux-de-vie give a cognac, seductive and complex.

The freshness is totaly present, with floral aromas. Alcohol is still creamy.  This cognac, thanks to its freshness, will be perfect for aperitif or digestive.

On the rock with noix de Saint Jacques, big shrimp, to accompany a diner. It will be perfect with a cheesecake or a fresh fruits salad, for a desert.
