Presentation of the domain:
The family domain, to saint Saturnin in Charente, exists since 1933 and extends over 90 hectares today.
Lots are isolated by vintage , by soil, and by barrel. Old vintage are sold without reduction.
For young cognacs, reductions are made for the rainwater to optimize the aromatic portance. The sub-drawings are made in the new moon by gravity to benefit at best from the fluid mechanics. The bottling is made 100% in the hand on the domain.
Presentation of the vintage:
Distillation on lees is commonly used in cognac area to obtain richer eau-de-vie by distilling wines with lees*. On this vintage 2010, Bourgoin decided to double lees volumes during distillation (around 200 mg/L ester) to obtain an even bigger aromatic complexity.
Elegant flavors of pear, rose petal, fresh mango, cut hay and passion fruit.
*Lees : The lees in wine are essentially the dead yeast cells, leftover from the fermentation process.
